1. Product name and description

Glucono delta-lactone (GDL) is the acidifying agent (starter culture replacer).

Production process:

  • Starch hydrolyze to obtain dextrose (D-glucose).
  • Dextrose aerobic oxidation (fermentation) to obtain gluconic acid.
  • Gluconic acid dehydration to obtain GDL.
  • After solubilization, GDL hydrolyzes slowly into gluconic acid. The acidification resulting from this reaction is progressive until balanced condition is achieved – about 80% of gluconic acid and about 20% of GDL.
